Lawless Cooking: Brown Bread (Outback Copycat)

Here's the recipe.


  • 1 1/2 cup warm water

  • 2 T dry active yeast

  • 1 T granulated sugar

  • 1/4 cup honey

  • 1/4 cup brown sugar

  • 1 egg

  • 1 1/2 T molasses

  • 1 1/2 cup wheat flour

  • 2 1/12 cup all-purpose flour

  • 2 T cocoa powder

  • Heavy pinch of salt

  • Splash of milk (optional)

  • Oats for sprinkling (optional)

  1. Stir together water, granulated sugar, and yeast. Set aside and let bloom for about 10ish minutes. When it's all bubbly, the yeasty beasties are happy, hungry, burpy little guys and you have burp juice ready for the bread-making.

  2. Combine flours, honey, brown sugar, egg, molasses, cocoa powder, and salt. Pour in burp juice. Mix thoroughly. You can use your stand mixer with a dough hook or just get in there with washed hands and enjoy the foodie ASMR.

  3. Knead your dough for 10-15 minutes until it is less sticky and smooth like play-dough.

  4. Place in an oiled bowl, cover, and let rise for 1 hour. Punch down and knead for 5-10 more minutes.

  5. Divide dough into two equal portions and shape into your preferred loaf shape.

  6. Drop into loaf pans. Brush the tops with a little milk and sprinkle with oats to feel fancy.

  7. Place loaves in cold oven. Turn it on to 350F. The bread will finish proofing while the oven warms up.

  8. When the oven reaches temperature, start your timer. Bake for 40-50 minutes.


Voila, yummy brown bread just like Outback's but without the weird decor or uncomfortable booths.
